how to cook

Bring 1 inch of water to a boil.

Add 3-4 cups of sliced squash and 1/2 – 1 tsp salt. 

Return to boil, reduce heat, cover and simmer for 2-3 mins or until tender crisp.

Drain and serve with butter.

Pan Fried Squash

  • Zucchini, yellow or patty pan squash
  • Butter
  • Salt

Cut squash into 1/4 inch rounds. 

Dip in flour and fry in hot butter until golden brown, turning once. 

Sprinkle with salt and pepper.

Zucchini Pie

  • 4 cups sliced zucchini 
  • 1/2 teaspoon salt & pepper 
  • 1 cup chopped onion 
  • 2 eggs, beaten 
  • 1/2 cup butter 
  • 8 oz shredded cheese 
  • 2 tablespoons parsley 
  • 1 8oz pkg crescent rolls

Cook zucchini and onions.

Stir in parsley, salt and pepper. 

Blend eggs, cheese and butter together and add the drain squash. 

Pour into a buttered pie dish. 

Top with Crescent rolls for the crust. 

Bake 20 mins at 350 degrees.
