Wash medium sweet potatoes.

Prick with fork and rub with Crisco oil.

Bake at 400 degrees for approximately 50 mins. 

Cut open and eat with butter and salt.

Sweet Potato Pie

• 2 cups mashed sweet potatoes 
• 1/2 tsp. vanilla extract 
• 1 cup sugar 
• 1/2 tsp. lemon extract 
• 1/2 stick butter melted 
• 2 eggs separated beat whites 
• 1 cup evaporated milk

Preheat oven to 375 degrees. In large bowl mix all ingredients together except the egg whites. Once all ingredients are mixed well add the egg whites in. Spoon mixture into pie plate and cook about 45 mins.

Sweet Potato Biscuits

• 2 cups Bisquick 
• 1 cup sweet potato cooked & mashed 
• 1/2 cup sugar

Mix all three ingredients together in bowl. Roll dough into balls. Preheat oven to 425 degrees and bake for 10-12 mins or until golden brown.
