Baked Tomatoes
- 1 quart diced tomatoes
- 5 slices of bread
- Pinch of baking soda
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1/2 cup flour mixed with water to make thick
- 1 1/2 – 2 cups sugar paste
Mash bread into tomatoes.
Mix all remaining ingredients into tomato mixture.
Pour mixture into greased 8×8 baking dish.
Cook for 45 minutes to 1 hour at 350 degrees.
Stewed Tomatoes
- 6 large ripe tomatoes
- 1/2 teaspoon salt
- 2 tablespoon butter
- 1/8 teaspoon pepper
- 1 tablespoon sugar
- 1/2 teaspoon basil
Peel tomatoes and cut into chunks.
Melt butter and add tomatoes and remaining ingredients.
Simmer 10 mins or until tomatoes are soft.
Fried Green Tomatoes
- 6 medium green tomatoes
- 1/2 teaspoon salt
- 2 eggs
- 1/2 teaspoon oregano
- 1/4 cup milk
- 1/8 teaspoon pepper
- 1 cup corn meal, bread crumbs or flour
- 2 tablespoons butter
- 1 tablespoon vegetable oil
Slice tomatoes into 1/4 to 1/2 inch slices.
Beat together eggs and milk.
Combine corn meal, salt, oregano and pepper.
Heat butter and oil in a skillet.
Dip tomato slices in egg mixture then in corn meal mixture.
Fry tomato slices, turning once, until golden brown on both sides.
